1 cup sprouted mung beans
3 cups water or veggie broth
4 chopped green onions using the white and pale green parts
2 ribs celery, trimmed and sliced cross-wise into c-shapes
1 apple, diced
1 ripe avocado, sliced
1/3 cup chopped almonds
1/4 cup olive oil
3 tablespoons or a handful of chopped Italian parsley
2 tablespoon lemon juice
sea salt and freshly ground black pepper, to taste
Rinse your mung beans. In a medium sized saucepan, bring the water to simmering, add the mung beans and gently simmer for no more than 5 minutes. Remove from the heat, leave the lid on and let stand for between 4-8 minutes.
While all this is happening, prepare the other ingredients.
Drain and mix the mung beans with everything else.
