Just Discovered This Refreshing Vegeo Light Meal That's Vegan, Paleo And Delish!

One Bowl Mung Bean Meal

Received a visit this afternoon from Alex, who's studying at Uni and living with a Chinese flatmate. Alex was telling me how he's 90% vegetarian now and discovering loads of new taste sensations from his Chinese flatmate.
When Alex told me about this delicious dish, I had to try and find it online. This This One Bowl Mung Bean Meal is from The Kitchn, courtesy of Sara, and I can't wait to make it.
To serve 4 (or make 4 meals for yourself) you'll need...

1 cup sprouted mung beans
3 cups water or veggie broth
4 chopped green onions using the white and pale green parts
2 ribs celery, trimmed and sliced cross-wise into c-shapes
1 apple, diced
1 ripe avocado, sliced
1/3 cup chopped almonds
1/4 cup olive oil
3 tablespoons or a handful of chopped Italian parsley
2 tablespoon lemon juice
sea salt and freshly ground black pepper, to taste

Rinse your mung beans. In a medium sized saucepan, bring the water to simmering, add the mung beans and gently simmer for no more than 5 minutes. Remove from the heat, leave the lid on and let stand for between 4-8 minutes.

While all this is happening, prepare the other ingredients.

Drain and mix the mung beans with everything else.

Thanks very much to Sara at The Kitchn for this recipe, which I've adapted a little bit.
